At Ascension Cider we focus on the flavour, from the super juicy ciders, to our bright and fresh cider blends. The taste of our ciders and blends are dictated by the fruits used, as we don’t mess about with refined sugars and acid.

Our cider is made from 100% fresh eating and cooking apples. We principally utilise eating apples that are rejected by the supermarkets because of their unsuitable shape and size. We also do our best to support local growers around Sussex and Kent if supply and season allow.

Ascension ciders showcase the apple, as well as blending with other fruits and flavours to create a core range of ciders of differing tastes and strengths, plus a series of ciders and blends that change with the seasons.

Matt’s signature blending technique uses a house yeast strain to ferment apple juice into cider, before adding freshly pressed juice to bring you a true taste of nature.

Inconsistent By Nature

Due to the different apples that are available to us at the time of fermentation and blending, the flavour of our ciders naturally changes throughout the year.

Because we work with the seasons, our ciders will give you a new experience from each variety of apple, pear, or soft fruit combination. From fresh and juicy to dry and heavy, new flavour combinations are constantly arising from our apple alchemy.

Our range of blends are available to buy in kegs, bag in box, bottles or cans.

Our core range of ciders celebrates the apple in all its glory. Using fresh juice in our blends allows the natural sweetness and acids to shine through, either on their own in Pilot and Mothership, or complementing other fruit additions such as Red Grape in Wrath, or Pineapple and Lemons in Shimmy.

A Family Business

Ascension Cider is a family business owned by son and father, Matt and Martyn Billing. We create and sell our exceptional ciders by blending Matt’s cider making skills with Martyn’s business expertise.

Matt has been making cider since 2012. Over this time, production volumes have grown somewhat, from making small batches in the garden shed to producing much larger volumes, but the passion and the dedication for flavour and sustainability have remained the same.

The balloon in our logo stems from our family’s passion for hot air ballooning. Matt’s grandfather, David started flying in 1985 and his father, Martyn qualified as a pilot in 1991, the year Matt was born. Matt is now a third-generation balloon pilot, and flies all over the UK, and the world.
